Here is a quick filling and frosting for cupcakes that kids love (I have discovered if the cupcakes are filled, they will eat more if not all of the cake part instead of just licking off the frosting): use a small package of instant pudding and mix with 1 cup of milk, let set about 5 minutes, then mix it with an 8oz container of non-dairy whipped topping (like cool-whip, just make sure it is thawed- and not in the microwave- you'll have soup). Any flavor pudding is good, vanilla and chocolate are my favorites. Put this mixture in a pastry bag with a large star tip or a filling tip, insert tip into cupcake and squeeze in the filling, you will feel the cupcake expand, do not use to much pressure or you will have a blow out, then in a circular motion swirl the filling on top of the cupcake.
If you do not want the filling and frosting the same, then just fill cupcake and frost with buttercream after filling cupcakes. If the filling oozes out a little, just swipe it off and frost. This is a yummy creamy way to make your cupcakes a hit! Hope you enjoy.

How to make a fun Luau cake and Palm tree cupcakes
Making these were so much fun!!
I made these for a friend, whose brother was getting married. She said it was going to be a real casual luau themed reception in the backyard. We talked about ideas and came up with what she
wanted. She bought some silk flowers and said I want these on the cake with a beach and an ocean. There are also seashells that she made out of chocolate and candy melts.
The cake was frosted in tan buttercream and then the pirouline cookies or pirouettes were stuck around the side by the buttercream. Then tan and blue buttercream were put on the top. Then I used
a mixture of pecans, brown sugar, and graham crackers. I used a food processor to make the "sand" really fine. It had a really good texture and flavor. I then put the "sand" on the tan frosting. Stuck the flowers in and added the seashells on top and around the bottom border. Then used raffia to tie a bow around the cake.
My friend also wanted cupcakes for the kids to eat. We decided on palm trees, with a beach as
well. I used fondant that was rolled out thinly and cut out palm fronds. I then used 4 fronds and glued them together with a mixture of water and a small amount of gum paste. I let them dry overnight. Then I used royal icing and attached pretzel rods to the leaves. Voila, palm trees. The cupcakes were frosted in blue, then added "sand", stuck the palm tree in and added some gummy fish for a fun cupcake that the kids loved.
