Quick filling and frosting for cupcakes or cakes

Here is a quick filling and frosting for cupcakes that kids love (I have discovered if the cupcakes are filled, they will eat more if not all of the cake part instead of just licking off the frosting): use a small package of instant pudding and mix with 1 cup of milk, let set about 5 minutes, then mix it with an 8oz container of non-dairy whipped topping (like cool-whip, just make sure it is thawed- and not in the microwave- you'll have soup). Any flavor pudding is good, vanilla and chocolate are my favorites. Put this mixture in a pastry bag with a large star tip or a filling tip, insert tip into cupcake and squeeze in the filling, you will feel the cupcake expand, do not use to much pressure or you will have a blow out, then in a circular motion swirl the filling on top of the cupcake.


If you do not want the filling and frosting the same, then just fill cupcake and frost with buttercream after filling cupcakes. If the filling oozes out a little, just swipe it off and frost. This is a yummy creamy way to make your cupcakes a hit! Hope you enjoy.

How to make a fun Luau cake and Palm tree cupcakes






Making these were so much fun!!

I made these for a friend, whose brother was getting married. She said it was going to be a real casual luau themed reception in the backyard. We talked about ideas and came up with what she
wanted. She bought some silk flowers and said I want these on the cake with a beach and an ocean. There are also seashells that she made out of chocolate and candy melts.
The cake was frosted in tan buttercream and then the pirouline cookies or pirouettes were stuck around the side by the buttercream. Then tan and blue buttercream were put on the top. Then I used a mixture of pecans, brown sugar, and graham crackers. I used a food processor to make the "sand" really fine. It had a really good texture and flavor. I then put the "sand" on the tan frosting. Stuck the flowers in and added the seashells on top and around the bottom border. Then used raffia to tie a bow around the cake.












My friend also wanted cupcakes for the kids to eat. We decided on palm trees, with a beach as well. I used fondant that was rolled out thinly and cut out palm fronds. I then used 4 fronds and glued them together with a mixture of water and a small amount of gum paste. I let them dry overnight. Then I used royal icing and attached pretzel rods to the leaves. Voila, palm trees. The cupcakes were frosted in blue, then added "sand", stuck the palm tree in and added some gummy fish for a fun cupcake that the kids loved.


I also filled the cupcakes with an easy filling. I find this helps the kids eat all of the cupcake, not just the frosting on top. Send a comment if you want the recipe for the filling. Hope you enjoyed looking at these pictures and learning about how I made them.

How I Started Cake Decorating!

I love cake decorating.


I became interested in cake decorating when I was a kid and watched my grandfather, who was a baker for years, make a wedding cake for my uncle. I think I was maybe 9, but it sparked an interest. So, when I was in High School and my church youth leader taught a class on Cake Decorating I was hooked.



I had to do a passion project for a class at school, and yep, you guessed it I picked cake decorating. My youth leader was willing to teach me, so I went to her house after school to learn more. That is how I started learning to make drop flowers, roses, borders, you know just the basics.



Then to my surprise, after I completed my "passion project", my teacher said guess what.. my husband and I are renewing our vows this summer, I want you to make my cake. No pressure... I am an insecure teenager and my teacher asks me to make a two-tiered wedding cake!! To top that of she wanted banana cake with lemon filling...I thought that sounded gross, but it was her husbands favorite. So there I went...baptism by fire. I grabbed a Wilton yearbook and drew up some ideas, found out how to support tiered cakes, made roses, figured out how to make cornelli lace and voila...my first wedding cake! To my surprise and I am sure my teachers, it actually turned out rather good, better than I thought it would. Don't know how it tasted, but it looked good.



Those early lessons with my youth leader, a community class, and a yearbook I started to learn more, especially by trial and error. I was not a professional, by any means, but my wedding cakes were straight (at least compared to some homemade ones I had seen),well for the most part. Anyway over the next couple of years I made cakes for my two younger sisters, who were married long before I was, and a friend's wedding. Of course I always got to make fun birthday cakes for family and friends, but I really enjoy making wedding cakes. In my next blog I will talk about some of my jobs as a cake decorator and about the tips and tricks I have learned along the way.



Oh, yeah, there was a point to all of this. If I can teach myself how to make a two-tiered wedding cake at age 18, then there is no reason why anyone can not learn how to DIY as well. With the internet now it is great, there are online courses, ebooks, if you need ideas there are a ton, and it is a lot easier now to find cake decorating products and tools, then it was back in the 90's. I have included some links for some decorating websites. I will update as I find more.
